Strawberry-Rose Bellini: A Mother’s Day Brunch Cocktail

Blush-pink, lightly floral, and infinitely sippable. The brunch upgrade your table deserves.

Ingredients

  • 1 oz fresh strawberry purée (4 to 5 ripe strawberries, blended)
  • 1/4 oz rose syrup (or 2 drops food-grade rose water)
  • 1/4 oz fresh lemon juice
  • 4 oz chilled Prosecco or dry sparkling rosé
  • Edible rose petal or strawberry slice, for garnish

Instructions

  1. Add strawberry purée, rose syrup, and lemon juice to a chilled champagne flute.
  2. Stir gently to combine.
  3. Slowly top with cold Prosecco, letting the bubbles settle.
  4. Garnish with a rose petal or thin strawberry slice.

Why It’s Better

Real fruit purée replaces the artificial peach nectars in most pre-bottled Bellini mixes, cutting added sugar while delivering true strawberry brightness. A well-built Bellini stays light on its feet, so brunch can stretch without the mid-meal slump.
